If you’re just starting your vegetable garden, you want to see progress fast. Well.. at least I did. These five vegetables are beginner-approved, quick to grow (take it from someone who is extremely impatient), and rewarding to harvest. Whether you have a backyard or just a few containers, you can start with these and get results in as little as a month.
🌿 1. Beans – Ready in 6 Weeks
Time to harvest: Generally 50–60 days
Why they’re great: Beans are low-maintenance, grow quickly, and don’t need much room. They’re great for small gardens or containers.
Tips:
Plant in full sun after the last frost.
Water regularly but don’t overdo it — they don’t like soggy soil.
Harvest frequently to keep the plant producing.
📌I love this Trellis Netting on Amazon for beans to help them grow straighter.
🌱 2. Lettuce – 4 Weeks to Harvest
Time to harvest: Usually 30–40 days
Why they’re great: Lettuce is fast, flexible and forgiving (sometimes, even if you accidentally step on it). Perfect for container growing and small spaces.
Tips:
Sow every 2 weeks for a steady harvest.
Keep the soil moist and cool for best results.
Harvest outer leaves early or cut whole heads when ready. (Depending on type planted)
📌 I’ve had luck with these lettuce seeds before from Amazon!
🫛 3. Sugar Snap Peas – 6 Weeks to Harvest
Time to harvest: Around 55–70 days
Why they’re great: Sweet, crunchy, and productive, peas thrive in cooler weather and grow well on trellises.
Tips:
Plant early in spring or late summer for fall crops.
Give them something to climb (like a mesh or pea trellis).
Pick often to keep them producing.
📌 I use the same Trellis Netting on Amazon for my peas as I do for my beans.
🥕 4. Baby Carrots – Harvest in 5 Weeks
Time to harvest: Between 40–50 days
Why they’re great: Baby carrots are satisfying to grow and don’t require much garden space. They are also a delicious snack!
Tips:
Thin seedlings early to avoid crowding.
Grow in deep containers or raised beds for best root shape. Extra tip – grow in garden beds without a built in bottom, this allows for extra root growth.
Keep the soil evenly moist.
📌 This sprinkler timer from Amazon is a lifesaver for the garden! Especially on weekends we decide to get away and go to camp.
🧄 5. Green Onions – Regrow or Plant From Seed
Time to harvest: 3–4 weeks (regrowth), 6+ weeks (from seed)
Why they’re great: One of the easiest vegetables to regrow from scraps. Also simple to grow from seed in small spaces.
Tips:
Plant the white base of store-bought green onions in soil or water.
Snip the tops and they’ll regrow several times.
Great for container or indoor growing and extremely low maintenance. I’ve forgotten about them and they still thrive!
📌 These grow lights work wonders for plants, especially those veggies that you have growing indoors.
You don’t need a green thumb or a huge yard to grow your own food. These five veggies are fast, fun, and foolproof — the perfect starting point for your gardening journey. With the rising cost of groceries and the ingredients they add to food these days, who wouldn’t want to start their own little garden! 🌞
Good luck, friends! Put your Creative Minds to work.
